A delightful pasta dish combining creamy cheese, crispy bacon, and sweet peas for a comforting meal.
Combine the ricotta, parmesan, butter, salt, and pepper in a large bowl and set aside.
Let the butter soften at room temperature for easier mixing.
Cook the bacon in a skillet over medium heat until crispy. Remove and place on a paper towel to drain. Once cooled, crumble the bacon.
Save the bacon grease for added flavor in the next step.
In the same skillet, sauté the onion for about 3 minutes, then add the garlic and cook for another minute. Transfer this mixture to the cheese mixture.
Avoid burning the garlic by stirring constantly.
Cook the pasta in a large pot of boiling water according to package instructions. Add the peas during the last minute of cooking.
Reserve some pasta water before draining for the sauce.
Drain the pasta and peas, reserving about 1 cup of the cooking water. Add half of the reserved water and the lemon juice to the cheese mixture and stir until smooth.
Adjust the consistency by adding more reserved water if needed.
Toss the pasta and peas with the cheese mixture until well coated. Stir in the crumbled bacon. Adjust seasoning to taste and serve.
