A delicious and easy-to-make skillet dish featuring caramelized onions, cheesy potatoes, and a flavorful dressing.
Heat half of the olive oil in a large skillet over medium heat. Add the sliced onions and cook, stirring occasionally, until they are golden brown and caramelized, about 20 minutes.
Stir the onions occasionally to prevent burning and ensure even caramelization.
In another skillet, heat the remaining olive oil over medium heat. Add the diced potatoes and cook, covered, stirring occasionally, until they are tender and lightly browned, about 15 minutes.
Cut the potatoes into even-sized pieces to ensure they cook evenly.
Stir the Thousand Island dressing into the cooked potatoes until evenly coated. Tear the cheese slices into smaller pieces and place them on top of the potatoes. Cover the skillet and cook for 2 minutes, or until the cheese is melted.
Use a lid to trap the heat and melt the cheese quickly.
Top the potatoes with the caramelized onions. Serve immediately and enjoy!
Garnish with fresh herbs like parsley or chives for added flavor and color.
